Vitamin C

Also known as ascorbic acid, it is a water-soluble vitamin. Unlike most mammals, humans can not synthesize it, so we must obtain it from our diet.
Its potency can be lost due to exposure to light, heat and air, since these factors stimulate the activity of oxidative enzymes. It is involved in at least 300 biochemical processes of the body and our daily requirement is greater than that of any other water-soluble vitamin.
