This situation is due in part to the reduction in imports of selenium-rich, high protein wheat used for bread making from North America, coupled with the wide usage of selenium-antagonistic artificial fertilisers and acid rain exposure.
Although the significance of this mineral was not widely acknowledged until 1979, this trace mineral is essential for many body processes. The mineral is present throughout the body but is most abundant in the kidneys, liver, spleen, pancreas and testes.

The most abundant sources of selenium include Brazil nuts, seafood, poultry and meats. Grains, particularly oats and brown rice, may also have significant amounts, depending on the selenium content of the soil in which they were grown.
